Sticky Ginger and Garlic Marinated Pork

Ingredients:

  • 2 ¾ tbsp Coconut Aminos Seasoning
  • ½ tsp Crushed Garlic
  • ¾ tsp Fresh Ginger
  • ¾ tsp Clover Honey
  • 1 sml Bok Choy
  • 1 cup Broccoli
  • 100 g Pork Steak
  • ½ cup Brown Rice Medium Grain
  • 1 tsp Extra Virgin Olive Oil
  • ¾ tsp White Sesame Seeds

Serves: 1 (Double the recipe for 2 serves)

Preparation:

  • Prepare the vegetables by washing the bok choy and cutting the end of the bulb off to remove individual leaves. Chop up the broccoli into smaller florets. Set both aside till it’s time to cook.
  • On a separate chopping board, slice the pork into smaller chunks before adding it to the bowl with the marinade. Coat the pork in the marinade and place it in the fridge till it’s time to cook.
  • Add coconut aminos, crushed garlic, grated fresh ginger, olive oil and honey to a bowl, and mix to combine.

Cooking:

  • Prepare the rice as per packet instructions.
  • Heat a pan to medium heat and add the bok choy and broccoli. Add only a splash of water, then place the lid on the pan and leave to steam-fry for several minutes. Remove from the heat once cooked.
  • Heat olive oil in another pan over medium-high heat. Use tongs to remove the pork pieces from the glaze bowl and place them in the pan to be cooked. Cook the pork pieces for several minutes until cooked through, before adding the rest of the marinade contents from the bowl into the pan. Once the marinade has been added, boost to high heat so the marinade can caramelise.
  • Serve the glazed pork, steamed bok choy and broccoli over rice. Sprinkle with sesame seeds and season with salt and pepper to taste. Tasty!
