Ingredients:
• 170 g Chicken Thigh (Boneless)
• 1 ¼ whole Spring Onion
• 1 Tbsp Clover Honey
• 1 Tbsp Dark Soy Sauce
• ¼ Tbsp Apple Cider Vinegar
• ½ Tbsp Crushed Garlic
• ½ Tbsp Crushed Ginger
• 1 lrg Carrot
• 1 ¾ cup Broccoli
• 1 ¼ tsp Extra Virgin Olive Oil
Serves: 1
Method:
• Preheat the oven to 180°C. Line a baking tray with baking paper.
• In a bowl, mix together the spring onion, soy sauce, honey, ginger, garlic and apple cider vinegar.
• Pat the chicken dry and remove any fat. Season with salt and pepper, then place in the bowl and cover with glad wrap. Place in the fridge and let it refrigerate for at least 30 minutes (or overnight) if time allows.
• Roughly chop up the carrots and broccoli.
• Remove the chicken from the marinade and place it on one side of the pan.
• Place the chopped carrots and broccoli on the other side of the pan and drizzle with olive oil. Season with salt and pepper. (Depending on the size of the chicken, it may cook faster or slower than the roast vegetables and may have to be removed earlier or later than the vegetables.)
• Pour any remaining marinade over the vegetables.
• Place in the oven and bake for 20-25 minutes.
