Chicken and Egg Salad

Recipe provided by Nourish App – A meal planning app that we highly recommend. Go to your app store and you can download Nourish App and design your own meal plans with recipes that adjust ingredients for your individual goal.

Ingredients: (Note, 1 serve)

•  80 g Shredded Roast Chicken

•  2 x Free Range Egg (Size 6)

•  1 tbsp Mayonnaise

•  ½ Tbsp Lemon Juice

•  ½ sml Avocado

•  ¾ cup Baby Spinach

Serves: 1

Instructions:

•  Add the eggs (boiled and sliced), shredded chicken, and avocado and mix gently to combine.

•  Serve on top of the spinach. Yum!

•  In a medium bowl, whisk together the mayonnaise and lemon juice. Season with salt and pepper to taste.

Optional Seasoning:

•  Simply sprinkle over chilli flakes or smoked paprika for an added kick.
