Ingredients:
• 2 sml Red Capsicum
• 4 cup White Button Mushroom
• 1 med Courgette
• 1 ½ sml Kumara (Orange)
• 4 cup Baby Spinach
• 8 whole Egg
• ¼ cup Milk Lite (Light Blue Top)
• 1 cup Cottage Cheese
• ¾ cup Parmesan
• ¼ cup Sundried Tomatoes
• ¼ cup Fresh Curly Parsley
Serves: 3
Instructions:
• Preheat the oven to 200ºC. Line a baking tray with baking paper.
• Chop the capsicum, mushrooms, courgette and kumara and place on baking tray. Roast for 25-30 minutes or until vegetables are soft.
• Meanwhile pan fry the baby spinach, until wilted.
• In a blender combine the egg, milk, cottage cheese, parmesan and some salt and pepper.
• Lightly grease an ovenproof dish and arrange the roasted vegetables at the bottom of the dish along with the sun-dried tomatoes and spinach.
• Sprinkle with parsley. Note: if the top gets too golden before it is set, cover it with foil and return to the oven.
• Pour over the egg mix and bake, uncovered, for 35 minutes, or until set and lightly golden.
