Mediterranean Lamb & Chickpea Salad

Ingredients:

•  ½ cup Chickpeas (Canned)

•  ¼ med Red Onion

•  8 ½ whole Cherry Tomatoes

•  ¼ med Cucumber

•  1 Tbsp Fresh Mint

•  1 Tbsp Extra Virgin Olive Oil

•  150 g Lamb Striploin

•  1 ½ cup Baby Spinach

•  ¼ cup Creamy Feta

•  ¾ Tbsp Balsamic Vinegar

Serves: 1

Instructions:

•  Drain and rinse the chickpeas.

•  Finely slice the red onion, cut the cherry tomatoes in half, and roughly chop the cucumber and mint.

•  Heat half of the olive oil in a frying pan over medium heat and cook the lamb on either side for 3-5 minutes or until cooked to your liking. Set aside to rest.

•  Return the pan to medium heat with the remaining olive oil and add the chickpeas. Cook until golden then set aside.

•  In a mixing bowl, combine chickpeas, spinach, red onion, cherry tomatoes and cucumber, and crumble in the feta.

•  Slice the lamb.

•  To serve, top the salad with the sliced lamb and chopped mint and drizzle with balsamic vinegar.age!
