Fast Veggie Quesadilla

Ingredients:

•  1 x Wholemeal Wrap

•  ¼ cup Black Beans

•  ¼ cup Supersweet Frozen Corn Kernels

•  ¼ cup Baby Spinach

•  ¼ tsp Garlic Powder

•  ½ tsp Ground Cumin

•  ½ tsp Ground Paprika

•  25 g Edam Cheese

•  ½ handful Fresh Coriander

•  100 g Firm Tofu

•  1 tsp Extra Virgin Olive Oil

Serves: 1

Preparation:

•  Press the tofu between two sheets of kitchen roll to absorb all of the excess liquid.

•  In a bowl, combine the beans, corn, chopped spinach and spices. Season with salt and pepper.

Cooking:

•  Place the wrap in a non-stick frying pan over medium-high heat and sprinkle half the cheese evenly over the wrap.

•  Spread the vegetable and tofu filling evenly over half of the wrap. Sprinkle over the rest of the cheese. Fold the other half of the wrap.

•  Cook until the wrap becomes golden and the cheese melts (about 2-3 minutes). Flip over and cook the other side. Enjoy!

•  Crumble the tofu, and add to a pan with oil. Cook over medium-high heat for 5-10 minutes. Remove from the pan.

Tips:

•  If you’re making this for multiple meals across the week, multiply the vegetable and spice measurements by the number of times you’re making the meal and combine and store in an airtight container in the fridge.
