Beef Enchiladas – Serves: 4
Ingredients:
• 1 tsp Extra Virgin Olive Oil
• 500 g Premium Beef Mince
• ¾ sml Brown Onion
• ½ can Black Beans
• ½ Tbsp Crushed Garlic
• ½ sml Green Capsicum
• ½ cup Beef Stock (Liquid)
• 1 ¼ cup Enchilada Sauce
• 8 x Tacos Tortillas (small)
• 100 g Edam Cheese
• 1 handful Fresh Coriander
Instructions:
• Finely dice the onion and capsicum.
• Drain the black beans and set aside.
• Preheat the oven to 180ºC.
• Line a baking tray with baking paper.
• In a medium pan, heat the olive oil. Add the garlic, onion and capsicum and cook until softened.
• Add the beef mince, breaking up and cooking until brown. Once the mince is nearly cooked, add the beans to the pan.
• Pour in the beef stock and 3/4 of the enchilada sauce. Let it simmer for 5-7 minutes to thicken.
• Fill each tortilla with the filling, roll up, and place in the dish.
• Pour over the remainder of the sauce and sprinkle over the grated cheese.
• Bake for 20-25 minutes or until golden brown.
• Serve with fresh coriander. Enjoy!
