Ingredients for 1 serving:
• 125 g Premium Beef Mince
• ¼ sml Brown Onion
• 1 x Garlic Clove
• ½ tsp Ground Cumin
• ½ tsp Ground Coriander
• ½ tsp Ground Turmeric
• 1 lrg Fresh Chilli
• 1 whole Egg
• ½ Tbsp Extra Virgin Olive Oil
• ¼ sml Mango
• ¼ med Cucumber
• ¼ med Red Onion
• 1 cup Baby Spinach
• ¼ cup Fresh Coriander
• ¾ Tbsp Lime Juice
• 1 ¼ tsp Fresh Ginger
Serves: 1
Instructions:
• Cook the koftas, turning them until browned and cooked through, about 8-10 minutes.
• Roughly chop the brown onion, grate the ginger, and finely slice the chilli. Peel and cut the mango into 1-inch cubes.
• Slice the cucumber into quarters, dice the red onion and roughly chop the coriander.
• To make the meatballs, add brown onion, garlic, ginger, cumin, coriander, turmeric and half the chilli to a food processor and blend until finely chopped and combined. Add to a large bowl with the beef mince and egg and combine.
• Using damp hands, roll heaped spoonfuls of the mixture into small koftas. Heat olive oil in a large frying pan over medium-high heat.
• While the meatballs are cooking, assemble the salad. Add mango, cucumber, red onion and coriander to a bowl with a squeeze of lime juice and stir to combine.
• To serve add a generous handful of baby spinach to a bowl, topped with the mango salad followed by the koftas, and garnish with the remaining chilli.
