Ingredients:
- 1 med Chicken Breast
- ½ pkt Soba Noodles
- 1 cup Frozen Edamame Beans
- 1 ½ cup Red Cabbage
- 1 ¼ whole Spring Onion
- 1 handful Fresh Coriander
- 1 lrg Carrot
- ½ med Cucumber
- 1 ¾ Tbsp Pic’s Double Crunch Almond Butter
- 2 ¼ Tbsp Sesame Oil
- 1 Tbsp Reduced Salt Soy Sauce
- 2 Tbsp Apple Cider Vinegar
- ¾ Tbsp Lime Juice
Serves: 3
Instructions:
- Cook noodles according to packet instructions. Drain once cooked.
- Poach the chicken by placing it in a pot of simmering water for 10 minutes or until cooked through. Once cooked, shred with a fork or electric beater.
- Place frozen edamame in a bowl of boiling water for a few minutes to defrost, then drain.
- Finely slice cabbage. Roughly chop spring onion and coriander. Make strips of the carrot using a peeler. Dice the cucumber.
- To make the dressing, combine all ingredients and whisk with a fork. Add a dash of water if necessary to reach desired consistency.
- Combine chicken, noodles, salad ingredients and dressing in a bowl. Garnish with coriander and extra lime to serve. Yum!
