Christmas Quinoa Salad

Ingredients:

•  1 cup Quinoa

•  3 cup Curly Kale

•  3 med Apple

•  ½ med Red Onion

•  ¼ cup Cranberries (Dried)

•  8 ½ rasher Streaky Bacon

•  1 block Halloumi

•  ¼ cup Pine Nuts

•  1 Tbsp Wholegrain Mustard

•  1 Tbsp Clover Honey

•  1 Tbsp Extra Virgin Olive Oil

•  1 Tbsp Lemon Juice

•  ¼ cup Creamy Feta

Serves: 8

Instructions:

•  Cook the quinoa as per packet instructions, then once cooked cool in the fridge.

•  Slice the haloumi into long, thing strips.

•  Roughly chop the bacon.

•  Heat 2 non stick frying pans on high heat, then add the bacon to one pan and the haloumi to the other, frying for 3-5 minutes each until golden.

•  Prep the salad ingredients – roughly chop the kale, dice the apple, thinly slice the red onion and cut the cherry tomatoes into quarters.

•  Combine the wholegrain mustard, honey, lemon juice and olive oil to make the dressing.

•  Toast the pine nuts in a non-stick frying pan on medium to high heat for 4-6 minutes until golden, checking regularly to prevent burning.

•  Combine the kale, red onion, apple, cherry tomatoes, quinoa, bacon, haloumi, cranberries and dressing in an appropriate sized bowl and mix to combine.

•  Top with the toasted pine nuts and crumble over the feta. Enjoy!
