Ingredients:
• 4 ½ lrg Plain Potato
• ¼ cup Butter (salted)
• 3 Tbsp Extra Virgin Olive Oil
• 2 Tbsp Dried Mixed Herbs
• 1 handful Fresh Curly Parsley
• ½ cup Parmesan
Serves: 6
Instructions:
• Slice the potatoes into thin, 5mm slices using a mandolin or a knife.
• Preheat the oven to 200ºC, fan-bake.
• Peel the potatoes.
• Melt the butter then combine with the olive oil and mixed herbs. Grate the parmesan and set aside.
• Place the potato slices in a bowl, then cover with the butter mixture, using your hands to ensure each slice is coated.
• Assemble the potatoes in an appropriate sized oven dish using the picture for reference. Season generously with salt and pepper.
• Cover with tinfoil, then bake in the oven for 40 minutes. Remove the tinfoil then bake for a further 40 minutes. Sprinkle with the parmesan cheese and bake for an extra 5 minutes.
• Finely chop the parsley. Serve sprinkled with the parsley and enjoy!
