Easy Satay Chicken

Ingredients:

  • 1 ½ sml Chicken Breast
  • ½ sml Red Capsicum
  • ½ med Red Onion
  • ¾ lrg Carrot
  • 1 tsp Extra Virgin Olive Oil
  • 1 Tbsp Smooth Peanut Butter
  • ¾ cup Water
  • 2 tbsp Satay Chicken Spice Mix
  • ½ cup Brown Rice Medium Grain
  • 1 Tbsp Lemon Juice
  • ½ handful Fresh Coriander

Serves: 2

Instructions:

  • Cook rice as per packet instructions.
  • Slice the capsicum and dice the red onion. Cut the chicken into even cubes.
  • Heat a non-stick frying pan on medium heat with the olive oil. Add the chicken and cook until lightly browned. Add the onion and capsicum and fry.
  • In a small bowl, mix together the chicken satay spice mix, water and peanut butter. Add to the frying pan and stir to coat the chicken and vegetables. Reduce heat to low, and cook for a further 3 minutes.
  • Add the lemon juice to the chicken mix, then serve hot on the cooked rice, garnished with coriander.

Tip: If you cannot find Satay Chicken Spice Mix (which is what makes it ‘easy’) google ‘how to make my own Satay Chicken Spice Mix’. The mix is a combination of:

  • coriander
  • cumin powder
  • tumeric
  • paprika 
  • chilli powder 
  • curry powder
  • salt
  • white sugar
