Inside-out Tacos

Ingredients:

  • 500 g Premium Beef Mince
  • 3 ½ tbsp Mexican Taco Spice Mix
  • 9 x Taco Tortillas (small)
  • ½ Tbsp Extra Virgin Olive Oil
  • 5 Tbsp Tomato & Capsicum Salsa (Mild)
  • ½ cup Sour Cream (Lite)
  • 1 med Tomato
  • 1 cup Iceberg Lettuce
  • 1 handful Fresh Coriander

Serves: 3

Method:

  • In a large bowl, mix together the mince and tacos seasoning until well combined.
  • Spread the mince mixture into the middle of the tortillas, flattening down with a spoon.
  • Heat a pan with some olive oil over a medium heat. Place the tortilla mince side down on the pan and cook for around 3 minutes. Flip, then continue cooking for another minute and set aside. Repeat with all the tortillas.
  • Meanwhile, slice the tomatoes and prepare the lettuce and coriander for the filling.
  • To make the tacos, place the salsa, lettuce, sour cream, tomato and coriander on one half of the mince.
  • Fold in half and serve.
