Ingredients:
- 4 whole Egg
- ¼ sml Brown Onion
- ¾ sml Courgette (use seasonal veges, this could be replaced with baby spinach)
- 1/4 Capsicum
- ¾ cup White Button Mushroom
- 1 Tbsp Extra Virgin Olive Oil
- ½ tsp Ground Turmeric
- ½ tsp Black Pepper
Serves: 1
Instructions:
- Dice or slice the onion, mushrooms, and courgette.
- Heat the oil in a frying pan over medium heat and fry the onion, mushroom, and courgette until soft, then remove from the pan.
- While the veggies are cooking, crack the eggs into a bowl and add one tablespoon of water per 50g of the egg. Whisk with a fork and season with turmeric, black pepper, and salt.
- Pour the egg mixture into the pan and tilt it to cover the pan’s surface. Cook for about 30 seconds, then scrape the pan’s surface with a spatula and tilt the pan again so the runny egg covers the surface again – repeat once or twice or until there is little runny egg left.
- Fill the omelette with the onion, mushroom, and tomato, and fold one side of the omelette in half over the top of the vegetable filling. Slide onto a plate to serve
