Ingredients:
- 2 med Chicken Breast
- ½ Tbsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Smoked Paprika
- 1 tsp Thyme (Dried)
- 1 Tbsp Unsalted Butter
- ½ Tbsp Crushed Garlic
- ¾ cup Cream
- 1 pkt Potato Gnocchi
- ½ cup Parmesan
- 1 cup Chicken Stock (Liquid)
- 2 cup Baby Spinach
- 1 med Lemon
Serves: 4
Method:
- Cut the chicken breasts in half, lengthways. Sprinkle with thyme, paprika, garlic powder, onion powder and season with salt and pepper. Rub the seasonings all over the chicken until evenly coated.
- In a large pan, heat half the butter over a medium heat. Add the chicken and cook for 2-3 minutes each side or until cooked through. Remove from the pan and set aside.
- Add the remaining butter to the pan, along with the cream, crushed garlic, chicken stock and juice of the lemon.
- Bring the mixture to a simmer, then add the gnocchi and grated parmesan. Cook until the gnocchi is tender.
- Lastly, stir through the spinach leaves.
- Slice the chicken, then to serve, dollop the gnocchi mixture onto plates and top with the chicken. Alternatively, stir the sliced chicken through the gnocchi, then serve.
