Easy Roast Pumpkin and Lentil Salad

Ingredients: (note ingredients are for 1 serving)

•  2 cup Pumpkin

•  ¾ tsp Extra Virgin Olive Oil

•  ¼ cup Creamy Feta

•  ¾ cup Lentils (Tinned)

•  ¼ cup Walnuts

•  2 tsp Balsamic Vinegar Glaze

•  ½ cup Rocket

•  1 handful Fresh Curly Parsley

Serves: 1

Instructions::

•  Preheat the oven to 200°C and drizzle the olive oil onto a baking tray.

•  Cut the pumpkin into cubes and place it on the baking tray. Season with salt and pepper, then roast for 20-25 minutes.

•  Once the pumpkin is cooked, toss together with the drained lentils, chopped parsley, walnuts, rocket and feta.

•  Drizzle over the balsamic glaze and season with additional salt and pepper. Enjoy!
