I LOVE using my slow cooker during the week. Who doesn’t love coming home from work and dinner is done? The smell is so good when you walk in, there’s very little dishes and dinner is over and done with and you can put your feet up after a big day. ALSO, this is a cheap and affordable home cooked meal that gave us dinner for four PLUS, two lunches! I love leftovers for lunch!!
Ingredients
500g Pork (I used pork shoulder chops that were on special, trimmed fat and took off bone)
400g pineapple pieces
1 large capsicum, chopped (the yellow capsicums were on sale when I went to the shop)
1 Onion
3-4 Carrots, peeling and sliced
1 tsp fresh ginger, minced or grated
3 Tbsp brown sugar
1/4 cup apple cider vinegar
4 Tbsp ketchup (I had tomato sauce)
2 Tbsp soy sauce
Thickener
2 Tbsp corn-flour mixed with 2 Tbsp cold water
1. In a fry-pan quickly sear the pork and add to the slow cooker
2. Miz together in a bowl brow sugar, ginger, apple cider vinegar, pineapple juice, ketchup, and soy sauce.
3. Add capsicum, carrot, onion, pineapple pieces to the slow cooker. Stir and add the liquid.
4. Cook for 6-8 hours on low. Mix corn-flour and water together to form a paste and add this in last 15 mins of cooking, turn the slow cooker to high to help thicken and cook through.
I added cabbage to ours that needed to be cooked. We had our Sweet and Sour with brown rice which added a lovely nuttiness to the meal, but you could have it with mashed potatoes or any other veges on the side.
