Loaded Sweet Potato

Ingredients:

•  4 med Kumara (Orange)

•  ½ Tbsp Extra Virgin Olive Oil

•  400 g Premium Beef Mince

•  1 ¼ sml Brown Onion

•  1 x Garlic Clove

•  3 tbsp Mexican Taco Spice Mix

•  1 ¾ cup Tomatoes Chopped in Puree

•  1 ¼ med Avocado

•  ¾ med Red Onion

•  1 lrg Tomato

•  ¾ cup Tasty Cheese

•  ¼ cup Sour Cream (Lite)

•  ½ handful Fresh Coriander

Serves: 4

Instructions:

•  Pour in the tinned tomatoes and taco seasoning. Add a dash of water if required and leave to simmer for a few minutes.

•  Preheat the oven to 200ºC.

•  Using a fork, prick small holes all over the kumara.

•  Place the kumara on a baking tray lined with baking paper. Bake for 30-40 minutes or until it’s softened.

•  Finely dice the garlic and brown onion.

•  Saute the onion and garlic in a frying pan in olive oil. Once sauteed add the beef and cook until browned.

•  Mash the avocado in a bowl.

•  Dice the red onion, tomato and coriander. Place half of the red onion and coriander in with the avocado. Season with half the lemon juice.

•  In a bowl, add the remaining red onion, coriander and tomato in a bowl. Season with half the lemon juice.

•  Grate the cheese.

•  Once the kumara has baked, slice them in half-length ways. Spoon in some beef mince and top with guacamole, salsa, grated cheese and sour cream. Enjoy!
