Beef Stroganoff

Serves: 2

Ingredients:

•  300 g Sirloin Steak

•  1 ¾ tsp Extra Virgin Olive Oil

•  ¾ sml Brown Onion

•  2 ½ cup White Button Mushroom

•  1 cup Baby Spinach

•  ½ Tbsp Crushed Garlic

•  1 tsp Tomato Paste

•  ½ tsp Ground Paprika

•  ¼ Tbsp Worcester Sauce

•  ¾ cup Beef Stock (Liquid)

•  3 ½ Tbsp Sour Cream (Lite)

•  120 g Dried Fettuccine Pasta

Instructions:

•  Return the cooked beef to the pan along with any of the juices. Cook for another 2-3 minutes until the flavours combine.

•  Thinly slice the steak. Season with salt and pepper.

•  Slice the onion and mushrooms and set aside.

•  Cook the fettuccini as per packet instructions.

•  Heat a pan with half the olive oil. Sear the beef for 2-3 minutes, then set aside on a plate. Do not cook it all the way through.

•  In the same pan, heat the remaining olive oil and cook the onion and garlic until softened.

•  Then add in the mushrooms, and paprika and cook until brown.

•  Add the Worcester sauce, tomato paste and beef stock, then bring to a boil. Reduce the heat, and simmer for around 5 minutes until thickened.

•  Stir through the sour cream and spinach until the spinach has just wilted.

•  Taste the sauce and season with salt and pepper as desired.

•  Serve the beef stroganoff on the fettuccini and garnish with chopped parsley if desired. Enjoy!
