Baked Salmon with Roast Potatoes & Herby Chermoula

Ingredients:

  • 1 ½ sml Raw Salmon
  • ¾ cup Baby Potatoes
  • 1 ¾ stalk Broccolini
  • ½ handful Fresh Italian Parsley
  • ½ handful Fresh Coriander
  • ½ Tbsp Fresh Mint
  • ½ tsp Crushed Garlic
  • ½ whole Shallot
  • ½ Tbsp Lemon Juice
  • 1 Tbsp Extra Virgin Olive Oil
  • ½ tsp Ground Paprika

Serves: 1

Instructions:

  • Preheat the oven to 200°C fan bake.
  • Place the new potatoes in a saucepan full of salted water. Bring the water to boil and cook the potatoes for 10 minutes, or until a sharp knife slips in easily. Drain the water.
  • Transfer the potatoes into a baking tray, drizzle with 1/3 of the olive oil and season with salt and pepper.
  • Whilst the potatoes are cooking prepare the Chermoula by blending together 2/3 of the olive oil, lemon juice, garlic, herbs and paprika. You may want to add a little water for a thinner consistency.
  • After 20 minutes of being in the oven, place the salmon on top, top of the potatoes. Season with salt and pepper. Return to the oven. Bake for a further 15-20 minutes or until the salmon is cooked through.
  • Blanch the broccolini.
  • Remove the salmon and potatoes from the oven, drizzle with Chermoula and serve with the broccolini. Enjoy!
