Black Rice And Roast Veggie Salad


200g Black rice
1 Large red kumara
2 Carrots
2 Handfuls of baby spinach
Feta to your taste
4-5 Sun dried tomatoes (sliced)

Cook rice according to packet instructions.
While rice is cooking , wash kumara and carrot and cut into 2cm, bite sized pieces. Roast at 200 degrees fan bake for 20-25 mins turning twice during cooking.
Cut feta into cubes and slice sun dried tomatoes into thin strips.
When rice is ready, drain and rinse under cold water. Put into salad bowl along with spinach, roast vegetables, feta and sun dried tomatoes and mix all together.
