One-Pot Cheesy Bolognese Gnocchi

Ingredients:

•  1 ¼ sml Brown Onion

•  1 lrg Carrot

•  ¾ tsp Extra Virgin Olive Oil

•  400 g Premium Beef Mince

•  1 Tbsp Crushed Garlic

•  ¼ Tbsp Dried Mixed Herbs

•  1 ¾ cup Pasta Sauce Bolognese

•  1 Tbsp Balsamic Vinegar

•  1 cup Beef Stock (Liquid)

•  1 cup Baby Spinach

•  1 ¼ pkt Potato Gnocchi

•  ½ cup Mozzarella (Block)

Serves: 4

Method:

•  Finely chop the onion and carrot. Grate the mozzarella.

•  Heat the olive oil over medium heat in a pan. Add in the garlic, onion and carrot and cook until fragrant.

•  Add the beef mince to the pan, breaking up and cooking until browned.

•  Pour in the stock, pasta sauce, balsamic vinegar and herbs. Season well with salt and pepper.

•  Bring the mixture to a boil, then cover and let it simmer for 10 minutes or until the mixture has thickened slightly.

•  Add the gnocchi and spinach to the pan and give it a stir.

•  Cover with the lid again, stirring occasionally. Cook for around 8 minutes or until the gnocchi is softened and cooked through. Add some additional stock or water if the gnocchi absorbs too much liquid.

•  Lastly, sprinkle over the mozzarella and leave for a few minutes to let it melt.

•  Sprinkle over fresh basil to serve.
