Ingredients:
- 1 Bundle Egg Noodles (Round cut)
- ½ Tbsp Crushed Garlic
- 1 ½ Tbsp Crushed Ginger
- ½ pkt Chicken Mince
- ¼ Tbsp Sesame Oil
- 4 cup Chicken Stock (Liquid)
- 4 Tbsp Shiro (White) Miso Paste
- 2 ½ sml Bok Choy
- ¾ med Carrot
- 1 ¼ whole Spring Onion
- 1 Tbsp White Sesame Seeds
Serves: 2
Method:
- Heat up a pot with the sesame oil. Add the garlic and ginger and cook until aromatic.
- Add the chicken mince to the pot, breaking up and cooking until brown. Stir one-quarter of the miso into the mince mixture, remove from the pan then set aside.
- Cook the egg noodles as per packet instructions. Drain and set aside.
- Finely julienne the carrots and roughly chop up the bok-choy and spring onion.
- In the same pot, make the miso soup by pouring in the stock and miso paste in a saucepan. Simmer gently for 2-3 minutes.
- Add the carrots and bok choy to the miso soup and continue simmering until the vegetables are tender.
- Lastly, add the egg noodles into the soup to heat through.
- Serve the noodles and soup topped with the chicken mince and chopped spring onion.
