Ingredients:
- 1 cup Basmati Rice
- 1 ¼ sml Brown Onion
- 6 ¾ tsp Fresh Ginger
- 2 ¼ cup Broccoli
- ¾ Tbsp Rice Bran Oil
- 2 ½ tbsp Green Curry Paste
- 1 can Light Coconut Milk
- 1 ¼ cup Green Beans
- 3 cup Prawns
- 1 ½ Tbsp Fish Sauce
- 1 ½ Tbsp Lime Juice
- ½ Tbsp Brown Sugar
- ½ handful Fresh Coriander
Serves: 4
Instructions:
- Prepare the rice according to packet instructions.
- Finely dice the onion and grate the ginger. Cut the broccoli into florets and roughly chop the stem.
- Heat a deep frying pan over medium heat. Add the oil and sauté the onion for a few minutes. Add the curry paste and ginger, cooking until aromatic.
- Pour in the coconut milk and bring to a simmer.
- Add the beans, prawns, fish sauce, lime zest and juice, brown sugar and broccoli. Simmer for 5-10 minutes or until the vegetables are tender.
- Serve over a bed of rice and garnish with coriander. Enjoy!
